Grain Spawn is used to inoculate wheat straw or sawdust. It can be used to inoculate hardwood outdoors but it is not ideal since it will attract squirrels and other animals that will try to reach the grains as food source. It can also be used to start culture on agar or to expand more grains.

Shiitake (Lentinula edodes) is the most popular of all the gourmet mushrooms. The shiitake is a saprophyte mushroom, it grows on dead wood or trees. The hobbyist can grow this mushroom outdoors by inoculating logs or indoors by inoculating sterilized hard wood fuel pellets in bags. The shiitake mushroom is for the more experimented hobbyist. Fruiting the shiitake block takes more time and patience when compared to Pleurotus Ostreatus. The shiitake mycelium is a slow grower and is ready to fruit in about three months. This is one of the tastiest gourmet mushrooms.

Ideal substrate: sawdust.
